Prepare the roll
Slice the hero roll lengthwise, keeping a hinge if you prefer. If you like a warm sandwich, preheat oven to 350°F (175°C) and toast the open roll on a baking sheet for 4–6 minutes until slightly crisp; otherwise leave untoasted.
Make the dressing
In a small bowl combine mayonnaise, Dijon mustard, extra-virgin olive oil, red wine vinegar, salt, black pepper, and optional oregano. Whisk until smooth and slightly emulsified.
Assemble cheeses and meats
Spread about half of the dressing evenly on the bottom half of the roll and the remainder on the top half. Layer the provolone slices on the bottom half first (this helps keep the sandwich from getting soggy), then arrange sliced roast beef, turkey, and Genoa salami evenly along the length of the roll.
Add vegetables
Top the meats with romaine lettuce leaves, overlapping tomato slices and red onion rings. Add the sliced pickles or banana peppers where desired.
Finish and serve
Close the sandwich and press gently to compress. If toasting warm, return the closed sandwich to the oven for 3–4 minutes to meld flavors and warm the meats slightly. Remove, slice the hero into 2–3 portions, let rest 1 minute, then serve immediately.
