Prepare the base

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

Add garlic and meats

Stir in the minced garlic and cook for an additional minute. Then, add the ground beef and ground pork. Cook until browned, breaking it up with a spoon, about 10 minutes.

Incorporate liquids

Pour in the red wine and let it simmer for about 3-5 minutes until it reduces slightly. Then add the crushed tomatoes, tomato paste, milk, bay leaves, oregano, and basil.

Simmer the sauce

Bring to a simmer, then reduce the heat to low. Cover the pot and let it cook for at least 1.5 to 2 hours, stirring occasionally. Add salt and pepper to taste.

Serve

Remove bay leaves before serving. Serve the Bolognese sauce over cooked pasta and enjoy!
