Prepare the Ingredients

Clean and slice the mushrooms. Remove the pits from the dates and chop them roughly. Cut the pork belly into bite-sized pieces.

Cook the Pork Belly

In a large skillet, heat the olive oil over medium heat. Add the pork belly pieces and cook until browned and crispy, about 5-7 minutes. Remove and set aside.

Sauté the Aromatics

In the same skillet, add the sliced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Add Mushrooms and Dates

Add the sliced mushrooms and chopped dates to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the mushrooms are caramelized.

Combine Ingredients

Return the cooked pork belly to the skillet. Pour in the soy sauce, add bay leaves, and pour in water. Season with salt and black pepper to taste.

Simmer

Let the mixture simmer for about 10-15 minutes, allowing the flavors to meld together. Stir occasionally.
