Method
Blue Rum-Hennessy Layer
Mix spirit layer
In a mixing glass add Hennessy, white rum, blue curaçao, and simple syrup. Add 3–4 large ice cubes and stir gently for 10–15 seconds to chill and slightly dilute. Strain into a small chilled vessel (or leave in the mixing glass) and set aside.
Note: the blue curaçao provides the blue tone. Keep this mixture slightly colder than the pineapple base so it will sit as the top/visible blue layer when assembled.
Pineapple-Lime Base
Prepare base
In a shaker, combine pineapple juice, fresh lime juice and coconut water (if using). Fill the shaker with ice and shake vigorously for 8–10 seconds until well chilled.
Strain the pineapple-lime mixture into a highball or Collins glass filled with crushed or pebble ice, leaving room at the top for the blue layer.
Assembly & Garnish
Create the ombré
Using the back of a bar spoon or by gently pouring over the spoon, slowly layer the chilled Blue Rum-Hennessy mixture over the pineapple base so it floats and forms a blue ombré gradient. Pour slowly and close to the ice to minimize mixing.
If the layers start to blend too much, reduce pouring speed and pour over the spoon handle in multiple small increments.
