Prepare glass

Select a lowball/Old Fashioned glass. If you prefer a slightly chilled drink, place the glass in the freezer for 5–10 minutes or fill with ice and discard after 2 minutes.

Add sweetener and bitters

Place 0.25 oz simple or demerara syrup into the glass. Add 2 dashes of Angostura bitters and 1 dash of orange bitters if using. Stir gently with a bar spoon to combine the syrup and bitters (about 4–6 turns) to aromaticize the sweetener.

Add whiskey and ice

Pour 2 oz bourbon or rye whiskey into the glass. Add one large clear ice cube (or several large cubes) so the spirit chills without diluting too quickly.

Stir to integrate and chill

Using a bar spoon, stir the drink for about 20–30 seconds (15–20 full turns) until the outside of the glass feels cold and the proper slight dilution is achieved (roughly 15–25% dilution by volume of the drink). This smooths flavors and integrates bitters and syrup.

Express garnish

Take an orange peel about 1.5–2 inches wide. Hold it over the glass with the outside facing down and give it a firm twist to release the oils over the surface of the drink. Optionally rub the peel along the rim, then drop it into the glass. Add a maraschino cherry if desired.

Serve immediately. Sip slowly and enjoy. If the ice melts significantly, replace the ice and stir again to re-chill before continuing.
