Method
Mimosa station (90-minute bottomless)
Prepare juices chilled
Chill the fresh orange juice in the refrigerator until very cold (ideally below 6°C). Keep juices covered to preserve freshness.
Set up service dispensers
Transfer chilled orange juice into one large insulated dispenser (capacity ~2 L). Place chilled sparkling wine in ice buckets or in a chilled dispenser (if available) so bottles remain cold and fizz is preserved; do not pre-open bottles — open per batch to retain carbonation.
Pouring instructions for servers/guests
For each mimosa serving, fill a champagne flute 1/3 with chilled orange juice (about 80 ml) and top gently with chilled brut sparkling wine (about 120–150 ml) to preserve bubbles. Adjust ratio to guest preference. If guests prefer extra sweetness, offer a small carafe of pineapple juice as an alternative mixer (same 1:2 juice:wine guideline).
Garnish and presentation
Garnish each flute optionally with an orange wheel on the rim or a single mint leaf floated on top. Keep garnishes on a chilled tray near the station.
Service notes / pace
Monitor consumption for the 90-minute window: limit pours to standard flute portions. Replace sparkling bottles as needed; keep one bottle chilling while another is open to maintain continuous service.
Rum punch station (90-minute bottomless)
Make the rum punch base (yields ~6 L punch)
In a large clean container or dispenser, combine 960 ml pineapple juice, 480 ml guava nectar, 120 ml fresh lime juice, and 240 ml simple syrup. Stir until homogeneous. Taste and adjust: it should be bright and slightly sweet — add up to 30 ml more lime juice or up to 60 ml more simple syrup as needed.
Alcohol blending
For continuous service, pre-mix a blended rum pitcher for quick topping: combine 700 ml light rum, 250 ml dark/aged rum, and 100 ml spiced rum in a sealed, chilled pitcher. Keep additional bottles on hand to refill the blended pitcher. For each punch serving, staff should add 120–150 ml of the rum blend to 180–240 ml of punch base in a highball/punch cup (roughly a 1:1.5 spirit to mixer ratio by volume).
Assemble individual servings
Fill a highball glass 2/3 with cubed ice. Add 180–240 ml punch base, then top with 120–150 ml rum blend. Gently stir once to incorporate. Optionally top with a splash (15–30 ml) of club soda for effervescence.
Garnish and finish
Garnish with a pineapple wedge and a maraschino cherry on a pick, and tuck a mint sprig into the glass. Serve immediately on a chilled tray.
Refill & safety notes
Maintain two full dispensers: one with non-alcoholic punch base and one with the rum blend (if station setup allows), or keep bottles chilled and staff-pour to control ABV. Monitor guests and adhere to local service laws; offer water and food throughout service and cut off alcohol service at the scheduled end of the 90-minute period.

Quantities provided are scaled to comfortably serve up to 8 guests during a 90-minute bottomless session (approximate per-guest consumption: 3–4 mimosas or 3–4 rum punch servings). For larger groups, scale ingredients proportionally. Keep ice replenished, bottles chilled, napkins and trash receptacles accessible, and a staff member to manage pours to ensure pace and safety.
