Jerk Marinade
Prepare marinade
Remove stems from scotch bonnet peppers and roughly chop (remove seeds if you prefer milder heat). Roughly chop green onions. In a blender or food processor combine peppers, green onions, thyme leaves (strip from stems), garlic, ginger, soy sauce, olive oil, brown sugar, lime juice, allspice, cinnamon, nutmeg, black pepper and salt. Purée until smooth, scraping down sides as needed. The marinade should be thick but pourable; add 1-2 tablespoons water if too thick.
Taste and adjust
Taste a small amount (use caution — it will be spicy). Adjust salt, sugar or lime to balance heat and acidity. Remember flavors will mellow during cooking.
Chicken
Prep chicken
Pat the chicken pieces dry with paper towels. Using a sharp knife, score the skin and flesh in 2–3 shallow cuts on each piece to allow marinade to penetrate.
Marinate
Place chicken in a large bowl or resealable bag. Pour the jerk marinade over the chicken, ensuring each piece is well coated and some marinade gets into the cuts. Cover and refrigerate for at least 4 hours, preferably overnight (8–12 hours) for best flavor. If short on time, allow at least 1 hour at room temperature.
Sear (optional, for extra color)
Remove chicken from refrigerator 30 minutes before cooking to come toward room temperature. Preheat a heavy skillet (cast iron) over medium-high heat and add canola oil. Sear chicken, skin-side down, for 2–3 minutes until golden brown; turn and sear the other side 1–2 minutes. This step develops color and flavor but can be skipped if grilling directly.
Slow-cook over indirect heat (grill method)
Set up a grill for two-zone cooking: coals or burners on one side for direct heat and an indirect side for slower cooking. Preheat to medium (about 350–375°F / 175–190°C). Place chicken on the cooler (indirect) side, skin-side up, and cover. Cook for 30–40 minutes, turning once halfway, until an instant-read thermometer in the thickest part of a thigh reads 165°F (74°C). During the last 6–8 minutes, move chicken to the direct heat side or increase heat and cook skin-side down briefly to char and crisp, basting with reserved marinade if desired (do not use marinade that touched raw chicken unless boiled first).
Oven or smoker alternative
To replicate slow smoky cooking without a grill, preheat oven to 350°F (175°C). Place marinated chicken on a wire rack set over a baking sheet. Bake for 35–45 minutes until internal temp reaches 165°F (74°C). For added smoke flavor, place a small piece of smoked wood in a smoker box or use liquid smoke (1/4 tsp) added to the marinade.
Rest
Remove chicken from heat and let rest 8–10 minutes to allow juices to redistribute before serving.
Grilling / Serving
Finish and serve
Arrange chicken on a platter with lime wedges and thyme sprigs. Serve with rice and peas or your chosen side. Offer extra lime wedges and a mild yogurt or mango salsa on the side to offset heat, if desired.
Storage
Leftover cooked jerk chicken can be refrigerated in an airtight container for up to 3 days or frozen for up to 3 months. Reheat gently in an oven at 325°F (160°C) until warmed through.
