Plantain "Buns"
Prepare and fry plantains
Peel the ripe plantains and cut each into 2 even lengthwise pieces (you will get 6 bun halves from 3 plantains). Slice each lengthwise piece horizontally to create a flatter bun surface if needed. Heat 1 cup vegetable oil in a heavy skillet over medium heat until shimmering (about 350°F / 175°C if using a thermometer). Pat plantain pieces dry with paper towel and season both sides lightly with 3/4 tsp salt and 1/4 tsp black pepper. Fry plantain pieces in batches, 2–3 minutes per side, until golden brown and tender. Transfer to a paper-towel-lined plate to drain. Keep warm in a low oven (200°F / 95°C) while finishing other components.
Tip: For firmer buns, press gently with a spatula during frying to flatten more evenly. Avoid overcrowding the pan so pieces fry evenly.
Beef Patties
Make pattie mixture
In a bowl combine 1 lb ground beef, 1/4 cup fine breadcrumbs, 1 beaten egg, 1 tsp Worcestershire sauce, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp ground cumin, 1 tsp minced garlic and 1/4 cup very finely chopped onion. Mix gently with your hands or a spoon until just combined; avoid overworking to keep patties tender.
Shape and cook patties
Divide mixture into four equal portions for 4 smaller burgers (or two for large patty burgers). Shape into rounds slightly wider than your plantain buns and about 3/4-inch thick, pressing a shallow dimple in the center to prevent puffing. Heat 1 tablespoon vegetable oil in a skillet over medium-high heat. Sear patties 3–4 minutes per side for medium (adjust time for desired doneness), turning once. If patties are thick, reduce heat and cook an additional 2–3 minutes per side. Remove from pan and let rest 3 minutes before assembling.
Pepper & Toppings
Sauté peppers and optional heat
While patties cook, heat 1 tablespoon olive oil in a separate skillet over medium heat. Add sliced red and yellow bell peppers and sauté 4–5 minutes until softened but still with slight bite. If using, add 1/4 tsp minced scotch bonnet/habanero and cook 30–45 seconds more (handle peppers carefully and wash hands). Season peppers with 1/2 tsp salt and 1/4 tsp black pepper. Remove from heat and set aside.
Prep fresh toppings
Wash and dry 4 lettuce leaves and slice 1 tomato into 4 thin rounds. Keep ready for assembly.
Homemade Burger Sauce
Make sauce
In a small bowl whisk together 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 teaspoon dijon mustard, 1 teaspoon honey, 1 teaspoon fresh lemon juice, 1/2 teaspoon garlic powder, 1/2 teaspoon smoked paprika, 1/4 tsp salt and 1/4 tsp black pepper until smooth. Taste and adjust seasoning or sweetness. Chill briefly if time allows to let flavors meld.
Assembly & Serving
Assemble the burger: place one fried plantain piece flat-side down as the bottom bun. Spread about 1 tablespoon of burger sauce on the plantain. Add a lettuce leaf, a beef pattie, 1–2 slices of sautéed peppers, and a tomato slice. Spoon another 1 tablespoon of sauce onto the top plantain half and place it sauce-side down as the top bun. Repeat for remaining burgers.
Serve immediately with your choice of seasoned french fries (about 2 cups per serving) or Jollof rice (upcharge) alongside. Garnish fries with a sprinkle of salt and smoked paprika if desired.
