Cocktail Base
Build and chill
Fill a cocktail shaker halfway with ice (about 1 cup). Add 1.5 oz Aperol, 0.75 oz peach schnapps, 0.5 oz fresh lemon juice, and 0.25 oz simple syrup. Secure the lid and shake vigorously for 10–12 seconds until well chilled and slightly diluted.
Strain the shaken mixture into a chilled large wine glass or Collins glass filled with fresh ice (leave room for Prosecco).
Topper & Garnish
Slowly top the strained cocktail with 3 oz chilled Prosecco. Pour gently over the back of a spoon or down the side of the glass to preserve some effervescence and create a layered appearance.
Garnish with a peach slice and a lemon wheel on the rim. Optionally slap a mint sprig between your palms to release aroma and tuck it beside the peach slice.
Serve immediately with a long spoon or stirrer so the guest can lightly combine the Prosecco with the aperol-peach base if desired.
