Prepare bread
Slice Agege bread into thick slices (about 1 to 1¼ inch). If loaf is pre-sliced, separate 6 slices. Lightly spread about 1/2 tablespoon of softened butter on one side of each slice (reserve remaining butter).
Toast in pan
Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tablespoon vegetable oil and swirl to coat. Place the buttered sides of two bread slices down on the skillet (buttered side touching pan) and toast 1½–2 minutes until golden and crisp. Flip and toast the other side 45–60 seconds. Repeat in batches for remaining slices. Keep toasted slices warm on a plate covered with foil.

Prep vegetables
Finely dice onion and tomato (about 1/4 cup each). If using scotch bonnet, remove seeds and finely mince; set aside separately if you want milder heat.
Cook scrambled mix
Wipe the skillet clean, then heat 1 tablespoon vegetable oil over medium-low. Add diced onion and sauté 1–2 minutes until softened. Add diced tomato and optional chili; cook another 1 minute to release juices. Pour in beaten eggs and let sit undisturbed 10–15 seconds until edges set. Gently stir with a spatula, folding eggs from the edges to the center, cooking 1–2 minutes for soft curds. Season with remaining 1/2 teaspoon salt and 1/2 teaspoon black pepper. Remove from heat when eggs are still slightly creamy (carryover heat will finish them).
Fry whole eggs (alternate option)
If you prefer fried eggs tucked into the bread instead of scrambled, heat 1 tablespoon oil in the skillet over medium. Crack eggs gently into the skillet (work in two at a time). Cook until whites are set and edges are crisp, about 2–3 minutes; for runny yolks cover the pan 30–45 seconds. Season with salt and pepper. Remove and keep warm.
Assembly & optional add-ins
Spread about 1 teaspoon mayonnaise (or desired amount) on the untoasted side of each bread slice. On three bottom slices, place a lettuce leaf if using, then divide the scrambled eggs (or 2 fried eggs per sandwich) evenly among them.
Top each sandwich with the remaining toasted bread slice, buttered side out. Press gently and, if you like, return sandwiches to the skillet for 30–45 seconds per side over low heat to melt cheese and warm through, pressing with a spatula to get classic crisp edges.
Transfer sandwiches to a cutting board, slice in half, and serve immediately while warm.
