Combine rums and citrus

In a large 2–3 quart pitcher or beverage dispenser, pour 3 cups white rum and 1 cup dark rum. Add 1/2 cup fresh lime juice. Stir gently to combine.

Juices and Mixers

Add fruit juices

Add 3 cups pineapple juice, 2 cups orange juice, and 1 cup passion fruit puree (or passion fruit juice) into the pitcher. Stir until homogeneous.

Add grenadine

Slowly pour in 1/2 cup grenadine and stir. Grenadine will add color and a pomegranate-like sweetness; adjust amount slightly for desired sweetness and color.

Sweeten and spice

Add 1/2 cup simple syrup to taste and 1 tsp Angostura bitters. Stir well and taste; add up to 2 tbsp more simple syrup if you prefer a sweeter punch.

Chill, Adjust, and Serve

Chill the assembled punch in the refrigerator for at least 30 minutes to let flavors marry. If you need to serve immediately, add large ice blocks to the dispenser to cool without diluting too quickly.

Before service, taste and adjust acidity or sweetness: add small amounts of lime juice (1 tsp increments) for brightness or simple syrup (1 tbsp increments) for more sweetness.

Set up service station: provide individual 16–20 oz glasses (one per guest), fill each with cracked ice, garnish with an orange wheel, pineapple wedge, and a mint sprig. Fill glasses from the pitcher or dispenser and replenish continuously for 90 minutes for each paying guest.

Note on portions: The recipe above yields approximately 10–12 (16 oz) servings depending on ice. Because this is a bottomless individual service, each guest must order separately; do not share one order between multiple people.

Storage and safety: Keep the punch refrigerated or on ice during service. Discard any remaining punch after service period exceeds 4 hours for safety, or sooner per local health regulations.
