Method

Preparation (before service)

Chill

Place bottles of sparkling wine and orange juice in the refrigerator for at least 4 hours prior to service so both are well chilled (ideally 45–50°F / 7–10°C for the wine). Keep extra bottles chilled in an ice bucket during service.

Juice & Strain

If using fresh oranges, squeeze and strain the juice to remove pulp and seeds. Chill strained juice. For a smoother pour and consistent flavor, use a fine mesh strainer to remove large pulp.

Prepare Garnish and Rim (optional)

Slice oranges into thin rounds or half-moons and chill. If sugaring the rim, pour 1 tablespoon sugar onto a small plate and place 1 teaspoon water on another plate. Moisten the glass rim with the water, then dip the rim into the sugar to coat lightly. Repeat as needed during service.

Service (continuous 90-minute pour for one guest)

Initial Setup

Seat the guest and confirm they have ordered the 90-minute bottomless mimosa (individual only). Bring a chilled champagne flute or wine glass, 2 chilled bottles of sparkling wine (or one bottle and a backup), and chilled orange juice.

First Pour

Fill the guest's glass one-third with chilled orange juice (about 2–3 oz / 60–90 ml) and top with chilled sparkling wine until the glass is nearly full, leaving a small gap to avoid overflow (ratio approx. 1:2 OJ to sparkling). Gently stir once with a bar spoon if needed to integrate.

Continuous Refill Protocol

For the next 90 minutes, monitor the guest's glass and offer gentle top-ups whenever the level drops below half full. Each top-up should follow the same approximate ratio (add mostly sparkling wine with a small splash of orange juice if the glass shows less orange juice than desired). Keep track of time to ensure refills stop exactly at 90 minutes. If the guest travels within the venue or steps away briefly, pause refills; do not allow sharing between guests.

Maintaining Temperature & Bubbles

Keep opened bottles chilled in an ice bucket and replace bottles as they warm. Pour gently at an angle to preserve carbonation and avoid excessive foam. If foam builds up, pause pouring and let bubbles settle before resuming.

Garnish & Optional Ice

Serve with an orange slice on the rim and offer optional ice if the guest prefers a colder drink. If ice is added to the glass, slightly reduce the amount of orange juice to avoid dilution overwhelming flavor.

End of Service

At the 90-minute mark, politely inform the guest that the bottomless service has concluded and offer one final pour to finish their glass (if desired). Remove any service bottles dedicated to that guest and update service records to ensure individual ordering compliance.
