Make the Pancake Batter

In a large bowl, mix together the flour, baking powder, sugar, and salt. In another bowl, whisk the egg and milk together, then pour into the dry ingredients. Stir until just combined.

Cook the Pancakes

Heat a non-stick skillet over medium heat. Melt 1 tablespoon of butter in the skillet. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown. Repeat with remaining batter.

Prepare the Potatoes

While the pancakes are cooking, peel and dice the potatoes into small cubes. In another skillet, heat olive oil over medium heat. Add the potatoes and season with salt and pepper. Cook, stirring occasionally, for about 15-20 minutes or until golden and tender.

Cook the Eggs

In the same skillet as the pancakes, melt the remaining 1 tablespoon of butter. Crack the egg(s) into the skillet and cook to your desired doneness (sunny-side up, over-easy, etc.).

Plate and Serve

On a plate, serve a stack of pancakes alongside the cooked eggs and golden potatoes. Enjoy your breakfast plate!
