Prepare vegetables and rice
Cook sushi rice according to package instructions (or use leftover seasoned rice). While hot, season rice with a mixture of 2 tbsp rice vinegar, 1 tsp sugar and 0.5 tsp salt if not pre-seasoned; let cool to room temperature. Peel, pit and slice avocado into 8 long slices. Cut cucumber into long thin strips (remove seeds if watery). Julienne carrot and daikon into matchsticks; measure quantities and keep separate.
Lay out a bamboo rolling mat and place plastic wrap over it. Place one nori sheet shiny side down on the plastic. Wet your hands to prevent sticking and spread about 1/2 cup of sushi rice in a thin even layer over the nori, leaving a 1-inch strip along the far edge without rice.

Prepare batter and dredges
Pat softshell crabs dry with paper towels, season lightly with 1/4 tsp salt. Set up three stations: (1) flour and remaining 1/4 tsp salt mixed together, (2) lightly beaten egg, (3) panko in a shallow dish. For a lighter crisp, whisk together 3/4 cup all-purpose flour and 1/4 cup cornstarch in a bowl. Add 1 large egg and pour in 1/2 cup ice-cold sparkling water and mix briefly—do not overmix; a few lumps are fine. Keep batter cold in a bowl set over ice if possible.
Heat vegetable oil in a deep skillet or pot to 350°F (175°C). If you don't have a thermometer, test by dropping a bit of batter—if it sizzles and browns in ~30 seconds, it's ready. Dredge each crab first in flour, then dip in the cold batter, then press into panko to coat evenly.
Fry the crabs
Carefully lower battered crabs into the hot oil, one or two at a time depending on pot size. Fry 2–3 minutes per side until golden brown and crisp. Remove with a slotted spoon or spider strainer and drain on a wire rack or paper towels. Keep warm in a low oven (200°F / 95°C) while you assemble rolls. Reserve oil for reuse or discard when cooled.
Sauces & Toppings
Make spicy mayo and finish nitsume
Whisk together 1/2 cup Japanese mayo and 1.5 tbsp sriracha until smooth; adjust heat to taste. Warm nitsume (3 tbsp) gently; if store-bought is thick, thin with 1 tsp soy sauce or a little warm water to a brushable consistency. Combine 1 tbsp soy sauce and 1 tsp rice vinegar and set aside for optional dunking. Toast sesame seeds in a dry pan over low heat 1–2 minutes until fragrant.
Assembly & Finish
Using the bamboo mat, lift the edge nearest you and begin to roll firmly but gently, tucking the ingredients and pulling the mat away as you roll to form a tight cylinder. Seal the far edge with a thin smear of nitsume to help adhesion. Repeat to make 3–4 rolls total (depending on nori and rice quantities).
Slice and finish
Using a very sharp knife moistened with water (wipe between cuts), slice each roll into 6–8 pieces. Plate the pieces, brush the top of each piece lightly with warmed nitsume glaze, then drizzle or dot with spicy mayo. Sprinkle toasted sesame seeds and sliced scallions over the rolls. Serve immediately with pickled ginger and optional wasabi and soy-vinegar dip.
