Harvest the Cabernet Sauvignon grapes when they are ripe, usually between late September and early October.

Harvesting Grapes

Destem the grapes and crush them to release the juice. This can be done by hand or with a crusher.

Crushing and Destemming

Transfer the crushed grapes (must) to a fermentation vessel. Add yeast to the must and let it ferment for about 7-10 days, maintaining a temperature of around 25-30°C.

Fermentation

After fermentation, press the must to separate the liquid wine from the solids. Collect the free-run wine and press wine separately.

Pressing

Transfer the wine to oak barrels for aging. Allow the wine to age for at least 12 months, checking periodically for flavor development.

Aging

Once the wine has matured, filter and bottle it. Seal the bottles with corks and store them in a cool, dark place.
