Harvest ripe Pinot Noir grapes, ensuring they are free from rot or damage. Remove stems and leaves, and wash the grapes gently in cold water.

Harvesting and Preparing the Grapes

In a clean and sanitized container, crush the grapes to release the juice. This can be done by hand or using a grape crusher.

Crushing the Grapes

Add the yeast to the crushed grapes and mix well. If desired, add sugar for sweetness. Cover the container with a cloth and let it ferment at room temperature for about 7-10 days, stirring daily.

Fermentation

After fermentation is complete, press the mixture to separate the juice from the solids. You can use a wine press or a clean cloth to strain the liquid.

Pressing the Wine

Transfer the liquid to a clean fermentation vessel (preferably oak barrels for authentic flavor) and add sulfites for preservation if desired. Allow the wine to age for at least 6 months to develop flavor.

Aging the Wine

Once aging is complete, carefully transfer the wine into clean bottles, cork them, and store them in a cool, dark place.
