Crush the Cabernet Sauvignon grapes to release the juice and separate the skins. Place the crushed grapes into a fermentation vessel.

Prepare the Grapes

In the fermentation vessel, add the sugar, water, acid blend, and crushed Campden tablet to the grape juice. Stir well to combine.

Add Ingredients

Sprinkle the wine yeast over the mixture in the fermentation vessel. Do not stir. Cover the vessel with a clean cloth and let it sit for 24 hours.

Pitch the Yeast

After 24 hours, stir the mixture gently and cover it again. Allow the fermentation to occur in a cool, dark place for about 7-14 days, stirring daily.

Fermentation

Once fermentation is complete, press the mixture to separate the liquid from the solids. Transfer the liquid to a clean fermentation vessel.

Pressing

Allow the wine to ferment in the secondary vessel for another 4-6 weeks. Check the specific gravity to determine when fermentation is complete.

Secondary Fermentation

Once fermentation is complete, siphon the wine into clean bottles and seal with corks. Store in a cool, dark place for aging.
