Harvest the Cabernet Sauvignon grapes, remove the stems, and crush the grapes to release the juice.

Prepare the Grapes

Transfer the crushed grapes with juice into a fermentation vessel. Add the sugar and water, then sprinkle the yeast over the top. Stir gently to combine.

Fermentation

Seal the fermentation vessel with an airlock and allow it to ferment for 7-10 days at a temperature between 20-25°C (68-77°F). Stir daily.

Primary Fermentation

After fermentation, press the mixture to separate the liquid wine from the solid grape skins. Transfer the liquid into a clean vessel.

Pressing

If desired, add oak chips to the wine for aging. Allow the wine to mature for 6-12 months in a cool, dark place.

Aging

Once aged, siphon the wine into clean bottles, seal, and label. Allow the wine to rest for at least 3 months before tasting.
