Prepare kumquats

Rinse the kumquats. Cut each kumquat in half lengthwise, remove any seeds with the tip of a knife or spoon. Reserve a few thin slices for garnish (about 6 slices).

In a small saucepan combine the halved kumquats, granulated sugar, water, and lemon zest. Use a wooden spoon to gently press some of the kumquat halves against the side of the pan to release juices and fragrant oils from the peel.

Bring the mixture to a gentle simmer over medium-low heat. Once simmering, reduce heat to low and cook for 6–8 minutes, stirring occasionally, until sugar is dissolved and kumquats have softened and the liquid is aromatic and slightly syrupy.

Remove from heat and let the mixture cool for 10 minutes. Using a fine-mesh sieve set over a bowl, press the solids with the back of a spoon to extract as much syrup and pulp as possible. Discard solids. Taste and if you want it sweeter, stir in up to 1 tablespoon additional sugar while syrup is still warm. Chill the syrup in the refrigerator for at least 30 minutes before using.

Cocktail Assembly

Chill 6 coupe or rocks glasses in the freezer for 5–10 minutes, or fill serving glasses with ice while you assemble the cocktail to chill them.

Mix the cocktail

In a large pitcher or mixing vessel combine the fresh lemon juice (about 6 tablespoons, 0.75 cups), chilled kumquat-lemon syrup (0.25 cups / 4 tablespoons), and vodka or gin (1.5 cups). Stir or gently swirl to combine.

Add ice to the pitcher (or to a shaker if making single servings). If making individual drinks: pour 2–3 ounces of the spirit + citrus + syrup mixture over ice in each glass (about 4–5 oz per drink base). For the batch: stir the pitcher with ice for 15–20 seconds to chill and lightly dilute.

Top each glass with club soda (about 1/4 cup per serving; total 1.5 cups for the batch) to add effervescence. Gently stir once to integrate soda without flattening it.

Garnish each glass with a kumquat slice and a lemon wheel. Add a mint sprig if desired for aroma. Serve immediately.

Note on balance: the recipe yields a bright, tart-sweet cocktail. If your lemons are very tart, increase syrup by 1–2 tablespoons. If too sweet, add an extra teaspoon of lemon juice per serving.
