Prep & Marinate

Trim and cut chicken

Trim excess fat from chicken thighs and cut into 1 to 1-1/4 inch cubes so they cook evenly (about 1.5 to 2 cm).

Make marinade

In a medium bowl combine Greek yogurt, 2 tablespoons olive oil, lemon juice, minced garlic, cumin, coriander, smoked paprika, 1/2 teaspoon black pepper, 1 teaspoon kosher salt and red pepper flakes (if using). Whisk until smooth.

Marinate chicken

Add the chicken pieces to the marinade, toss to coat thoroughly. Cover and refrigerate at least 30 minutes and up to 4 hours. Longer than 4 hours not necessary for thighs but acceptable up to overnight.

Prepare Vegetables & Skewers

If using bamboo skewers, soak them in water for 30 minutes to prevent burning. Preheat grill or broiler to medium-high (about 400–450°F / 200–230°C).

Cut red and yellow bell peppers into roughly 1- to 1-1/4 inch pieces. Peel and cut red onion into similar-sized wedges. Keep cherry tomatoes whole.

Pat marinated chicken pieces dry with paper towel (removing excess yogurt helps get a better char) and organize components for skewering.

Assemble Skewers

Thread chicken and vegetables onto skewers, alternating pieces: chicken, pepper, onion, cherry tomato, repeat. Leave a little space between items so heat circulates; aim for 3–4 chicken pieces per skewer depending on size.

Place assembled skewers on a tray and brush lightly with 1 tablespoon olive oil. Season vegetables with a pinch of salt and a grind of black pepper.

Cook

Grill method: Place skewers over direct medium-high heat. Cook 10–12 minutes total, turning every 2–3 minutes so all sides char evenly. Chicken is done when internal temperature reaches 165°F (74°C) and pieces are nicely charred in spots.

Oven broiler method: Arrange skewers on a foil-lined baking sheet about 6 inches from the broiler. Broil 8–10 minutes, turning once halfway, until edges are browned and chicken reaches 165°F (74°C).

Finish & Serve

Transfer cooked skewers to a plate and let rest 3–5 minutes. Sprinkle chopped parsley over the top and serve with lemon wedges to squeeze over before eating.

Serve warm with rice, flatbread, or a simple salad as desired.
