Preparation Directions
Prepare the Udon Noodles
Cook the udon noodles according to package instructions. Drain and set aside.
Make the Tempura Batter
In a large bowl, mix the all-purpose flour, cornstarch, baking powder, and cold water gently until just combined. Do not overmix.
Heat the Oil
In a deep pot, heat vegetable oil to 180°C (350°F) for frying.
Fry the Tempura
Dip the shrimp, sweet potato, and carrot into the tempura batter and carefully place them into the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.
Assemble the Dish
In a bowl, place a portion of the cooked udon noodles. Ladle hot dashi soup over the noodles and top with the tempura shrimp and vegetables. Garnish with chopped green onions.
Serve
