Preparing the Rice

Rinse and Cook the Rice

Rinse the Japanese short-grain rice under cold water until the water runs clear. In a rice cooker or pot, combine the rinsed rice and water. Cook according to the rice cooker instructions or bring to a boil, then cover and simmer on low for 15 minutes.

Season the Rice

Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Drizzle this mixture over the warm rice and gently fold it in with a spatula. Allow the rice to cool slightly.

Prepare Grilled Chicken

If using grilled chicken, slice it into thin strips once it has cooled slightly.

Prepare Tofu

If using tofu, press it to remove excess moisture, then cube it. You can sauté or grill it until golden brown.

If using shrimp, ensure they are cooked and peeled. You can season them lightly with salt and pepper.

Slice and Prepare Vegetables

Wash and slice the cucumber and radishes. Julienned the carrots and prepare the edamame by cooking them according to package instructions if frozen.

Assemble the Box

In a bento box or compartmentalized container, place a generous serving of the seasoned rice as the base. Arrange the protein options (grilled chicken, tofu, or shrimp) next to the rice.

Add Vegetables

Fill the remaining compartments with the sliced cucumber, julienned carrots, shelled edamame, and sliced radishes.

Garnish and Serve

Drizzle soy sauce over the protein and rice. Sprinkle sesame seeds on top and add strips of nori. Include pickled ginger on the side for a refreshing contrast.
