Preparation of Ice Cream Base

Heat Dairy Mixture

In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

Mix Matcha

Once the dairy mixture is hot, whisk in the matcha green tea powder until fully dissolved and smooth.

Whisk Egg Yolks

In a separate bowl, whisk together the egg yolks until they are pale and slightly thickened.

Temper Egg Yolks

Slowly pour about a cup of the hot dairy mixture into the bowl with the egg yolks, whisking constantly to temper the yolks and prevent them from scrambling.

Combine Mixtures

Pour the tempered egg yolk mixture back into the saucepan with the remaining dairy mixture. Cook over medium-low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

Add Vanilla

Remove the saucepan from heat, then stir in the vanilla extract.

Chill the Mixture

Transfer the mixture to a bowl and refrigerate for at least 2 hours, or until completely chilled.

Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
