Marinate the Steak

In a bowl, combine the soy sauce, vinegar, minced garlic, salt, and pepper. Cut the sirloin steak into strips and add to the marinade. Let it sit for at least 30 minutes.

Cook the Steak

Heat a large skillet or wok over high heat. Remove the steak from the marinade (reserve the marinade) and add it to the skillet. Cook until browned, about 3-4 minutes. Remove and set aside.

Sauté the Vegetables

In the same skillet, add a bit of oil if necessary, then add the sliced onion. Sauté until translucent. Add the sliced tomatoes and cook for another 2 minutes.

Combine Ingredients

Return the cooked steak to the skillet with the vegetables. Pour in the reserved marinade and stir everything together. Cook for an additional 2-3 minutes.

Serve

Serve the lomo saltado hot over cooked white rice, topped with French fries and garnished with fresh cilantro.
