Prepare Sausages

Simmering method (juicy, even heating)
Pour 2 cups of water (or beer for extra flavor) into a medium saucepan and bring to a gentle simmer over medium heat. Add the sausages, reduce heat to low so the liquid is just below simmer, cover, and warm for 5–7 minutes until heated through. Remove sausages with tongs and set aside. Do not boil aggressively — that makes skins split and sausages dry.

Alternative: Grill or pan-sear (charred exterior)
Preheat a grill or heavy skillet to medium-high. For grill: place sausages over direct heat and cook 6–8 minutes, turning every 1–2 minutes until evenly browned with light char. For skillet: add 1 tsp oil, sear sausages 6–8 minutes, turning until browned and cooked through.
Toast Buns

Split buns if not split, spread about 1 tsp (portion of the 1 tbs) butter or brush oil inside each bun. Place buns buttered-side down in a skillet over medium heat or on the grill for 1–2 minutes until golden and slightly crisp. Alternatively, place on a baking sheet and broil 1–2 minutes watching carefully to avoid burning. Remove and keep warm.
Assemble Hot Dogs

Place one sausage into each toasted bun.

Apply toppings as desired: squeeze about 1/2 tbs yellow mustard and 1/2 tbs ketchup per hot dog (use quantities from the Toppings section as a guideline). Add 1 tsp relish, 1–2 tbsp diced onion, or a spoonful (about 2 tbsp) sauerkraut to taste. If using shredded cheese, sprinkle ~1 tbsp cheddar onto the hot dog; if you want melted cheese, return assembled hot dogs to the grill or under the broiler for 30–60 seconds until cheese softens.

For spicy variation, add pickled jalapeños or a dash of hot sauce. Serve immediately with fries or chips and a pickle spear on the side.

Serve hot. Leftover cooked sausages and buns can be refrigerated in airtight containers up to 3 days. Reheat sausages gently in simmering water for 3–4 minutes or in a skillet; avoid high heat microwaving which can make them rubbery.
