    Make and shape patties

    Place the ground beef in a bowl. Sprinkle the kosher salt, black pepper, and Worcestershire sauce (if using) over the meat. Gently mix with your hands or a fork just until combined — do not overwork. Divide the meat into two equal portions (approximately 8 oz / 225 g each). Shape each portion into a patty about 3/4–1 inch thick and slightly wider than the buns. Make a shallow dimple in the center of each patty with your thumb to help them cook evenly and resist puffing.

    Cook the patties

    Heat a large skillet or cast-iron pan over medium-high heat for 2–3 minutes until hot. Add 1 tablespoon neutral oil and swirl to coat. Place the patties in the pan, leaving space between them. Cook without moving for 3–4 minutes until a brown crust forms. Flip once and cook an additional 3–4 minutes for medium (adjust 2–3 minutes for rare, 5–6 for well-done). If adding cheese, place a slice on each patty about 1 minute before done and cover the pan briefly to melt. Transfer cooked patties to a plate and tent loosely with foil to rest for 3–5 minutes.

    Prepare vegetables and sauces

    While the patties cook (or before), slice the tomato into 1/4-inch thick slices. Thinly slice the red onion into rings. Tear or wash and dry the lettuce leaves. In a small bowl combine mayonnaise, mustard, and ketchup (or spread separately on buns to taste).

    Toast the buns

    Butter the cut sides of the hamburger buns lightly. In a separate skillet or in the same pan after removing the patties, place buns cut-side down over medium heat and toast until golden and slightly crisp, about 1–2 minutes. Watch carefully to prevent burning.

    Assemble the burgers

    Spread the mayo-mustard-ketchup on the bottom bun. Place a lettuce leaf on the bottom bun, add the rested beef patty (with melted cheese if used), top with tomato slice(s), onion rings, and pickle slices. Spread a little extra ketchup or mustard on the top bun if desired, then close the burger. Serve immediately.
