Prepare corn

    Halve and quarter the cobs

    Trim the ends of each ear of corn so they sit flat. Stand an ear upright on a cutting board and slice it in half lengthwise. Lay each half flat and slice each half lengthwise into 2 quarters (so each ear yields 4 'ribs'). You should end up with 16 corn ribs from 4 ears.

    Blanch (optional step for tenderness)

    Bring a large pot of salted water to a boil. Add the corn ribs and blanch for 2 minutes to soften slightly. Remove with tongs and immediately transfer to an ice bath for 1 minute, then drain and pat dry. (This step helps cook the thick core so ribs crisp evenly; you can skip if using very fresh tender corn.)

    Season with oil and salt

    In a large bowl, toss the corn ribs with 2 tbs olive oil, 1 tsp kosher salt, and 1 tsp black pepper until evenly coated.

Cook corn ribs

    Preheat oven to 425°F (220°C). Arrange corn ribs in a single layer on a rimmed baking sheet lined with foil or parchment, cut-side down. Roast for 12–16 minutes, flipping once halfway through, until edges are browned and kernels show char spots and are tender when pierced with a fork.

    Grill method (for charred flavor)

    Preheat grill to medium-high. Place corn ribs directly on the grill grates or on a perforated grill pan. Grill 8–12 minutes, turning every 2–3 minutes until all sides have char marks and kernels are tender. Watch closely to avoid burning.

    Air fryer method (quick)

    Preheat air fryer to 400°F (200°C). Arrange ribs in a single layer (cook in batches if needed). Air fry 8–10 minutes, shaking or flipping halfway, until browned and crisp at edges.

Make finishing sauce

    While the corn cooks, whisk together 1 tbs mayonnaise, 2 tbs Greek yogurt, 1 tbs lime juice, 1 tsp finely chopped chipotle in adobo, 1 tsp honey, 1 tsp smoked paprika, 1 tsp garlic powder and 1 tsp salt in a small bowl until smooth. Taste and adjust heat, lime, or salt to your preference. Transfer to a squeeze bottle or small bowl for easier application.

Assemble & garnish

    When the corn ribs are done, arrange them on a serving platter. Drizzle or brush the finishing sauce evenly over each rib (about 1/2–1 tbs per rib, depending on preference).

    Sprinkle crumbled cotija (about 3 tbs) and chopped cilantro (about 2 tbs) over the sauced ribs. Serve with lime wedges for squeezing.

    Serve immediately while hot and crisp. Leftovers can be refrigerated in an airtight container up to 2 days; reheat in a 375°F (190°C) oven for 6–8 minutes to re-crisp.
