Snow Crab Cluster

Method

Snow Crab Cluster

  1. 1

Bring poaching liquid to a simmer

In a large pot, combine 4 cups water, 1 tablespoon coarse salt, 1 tablespoon Old Bay seasoning and 1 bay leaf. Bring to a gentle rolling simmer over high heat.

  2. 2

    Poach crab cluster

Reduce heat so liquid is at a gentle simmer. Submerge the pre-cooked snow crab cluster in the simmering seasoned water for 3–4 minutes to heat through and infuse flavor. Do not boil vigorously to avoid drying the meat.

  3. 3

    Drain and rest

Lift the cluster from the pot and let it drain briefly in a colander or on a rack for 1 minute. Transfer to a warm plate and keep warm while preparing the butter sauce.

Finishing & Serving

  1. 4

    Prepare garlic lemon butter

In a small saucepan or skillet over low heat, melt 4 tablespoons unsalted butter. Add 1 teaspoon minced garlic and cook gently 30–45 seconds until fragrant, taking care not to brown the garlic. Remove from heat and stir in the juice of half the lemon (about 1–2 tablespoons), 1 tablespoon chopped parsley, 1 teaspoon coarse ground black pepper and 1 teaspoon sea salt. Taste and adjust seasoning; keep warm.

  2. 5

    Plate and finish

Place the warmed snow crab cluster on a serving plate. Spoon the warm garlic lemon butter over the exposed crab legs and claws. Garnish with the remaining chopped parsley and serve lemon wedges on the side for additional squeezing.

  3. 6

    Serve suggestions

Provide cocktail forks or crab crackers if desired. Offer crusty bread to soak up the butter. Eat immediately while hot; to remove meat, crack shell with a mallet or cracker and pull meat from legs and claws.
