Prepare the Salmon
Preheat your oven to 400°F (200°C). Season the salmon fillets with olive oil, salt, and black pepper. Place them on a baking sheet lined with parchment paper.
Bake the Salmon
Bake the salmon in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork.
Make the Béarnaise Sauce
In a small saucepan, melt the butter over low heat. In a separate pan, combine shallots, white wine vinegar, and tarragon. Simmer until reduced by half, then strain the mixture. In a heatproof bowl, whisk together the egg yolks and strained mixture. Place the bowl over a pot of simmering water (double boiler) and whisk until thickened. Slowly drizzle in the melted butter while whisking continuously until the sauce is smooth. Season with salt and pepper to taste.
Serve
Plate the baked salmon and drizzle the Béarnaise sauce over the top. Serve immediately, preferably with a glass of sparkling rosé.
