Poach the Pears

In a medium saucepan, combine orange juice, lemon juice, honey, cinnamon stick, and a pinch of salt. Bring to a simmer over medium heat. Peel and core the pears, then add to the saucepan. Cover and poach for about 15-20 minutes or until tender. Remove pears and let cool.

Cook the Pork

Season the pork tenderloin with salt and black pepper. In a skillet, heat olive oil over medium-high heat. Sear the pork on all sides until browned, about 4-5 minutes. Reduce heat to medium and cook for an additional 15-20 minutes, or until internal temperature reaches 145°F (63°C). Let rest before slicing.

Make the Mousse

Melt white chocolate in a double boiler or microwave until smooth. In a bowl, combine goat cheese and heavy cream, then fold in the melted white chocolate until well combined. Chill in the refrigerator for at least 30 minutes to set.

Plate the Dish

Slice the pork tenderloin and arrange it on a plate. Place a poached pear beside the pork. Spoon the white chocolate mousse on top of the pear. Garnish with chopped pistachios for added texture and flavor.
