Cook the Pasta

In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute, until it turns golden. Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the sauce thickens, about 5-7 minutes.

Add the Cheese

Remove the saucepan from heat and stir in the cheddar cheese, Gruyère cheese, salt, black pepper, and paprika until the cheese is melted and the sauce is smooth.

Combine Pasta and Lobster

In a large mixing bowl, combine the cooked macaroni with the cheese sauce and the chopped lobster meat. Stir until combined.

Prepare for Baking

Preheat the oven to 350°F (175°C). Grease a baking dish with a little butter or oil. Transfer the mac-and-cheese mixture into the prepared dish.

Add Topping and Bake

In a small bowl, mix the bread crumbs with olive oil and sprinkle over the top of the mac-and-cheese. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbling.
