Place the finely chopped bittersweet chocolate in a heatproof bowl and set aside. In a small saucepan, heat the heavy cream just until it begins to simmer and small bubbles form at the edges (do not boil). Pour the hot cream over the chopped chocolate and let sit undisturbed for 2 minutes to soften the chocolate.

Prepare ganache

Stir the chocolate and cream gently from the center outward until smooth and glossy. Add the unsalted butter, vanilla extract and a pinch of kosher salt, stirring until fully incorporated. If any lumps remain, place the bowl over a warm water bath and stir until smooth. Cover with plastic wrap touching the surface and chill in the refrigerator for 1.5 to 2 hours, until firm enough to scoop.

Line a baking sheet with parchment paper. Using a small cookie scoop or teaspoon, scoop rounded portions of the chilled ganache and place on the prepared sheet. If ganache is too firm, let sit 5 minutes at room temperature; if too soft, return to fridge 10–15 minutes. Using lightly oiled or powdered-gloved hands, roll each piece quickly into a smooth ball (work fast to avoid melting).

Form truffles

Place cocoa powder, chopped toasted nuts, and confectioners' sugar in separate shallow bowls. Roll each truffle in the coating of your choice, tapping off excess. Arrange finished truffles on a tray and chill 10 minutes to set. Keep refrigerated in an airtight container up to 7 days or freeze up to 1 month (thaw in fridge).

Coat

Sift the almond flour and confectioners' sugar together into a bowl at least twice to remove any lumps. Set aside.

Prep dry ingredients

In a clean, dry mixing bowl, whip the room-temperature egg whites until foamy. Gradually add the granulated sugar while whipping and beat to stiff, glossy peaks. Add the vanilla extract and a pinch of salt and briefly mix to combine.

Make meringue

Fold the sifted almond flour mixture into the meringue in two or three additions using a spatula. Fold until the batter flows like thick lava and will form a ribbon that disappears back into the batter in about 10–15 seconds. Be careful not to overmix.

Macaronage

Transfer batter to a piping bag fitted with a plain round tip (about 1/2 inch). Pipe 1-inch rounds onto a parchment-lined baking sheet, spacing about 1 inch apart. Tap the baking sheet firmly on the counter twice to release air bubbles. Let the piped shells rest at room temperature for 20–30 minutes, until a skin forms and they are not sticky to the touch.

Pipe and rest

Preheat oven to 300°F (150°C). Bake one sheet at a time for 12–15 minutes, rotating halfway, until shells are set and bottoms lift easily. Remove from oven and cool completely on the sheet.

Bake and cool

Match similar-sized shells. Pipe about 1/2 tsp (or 1 large dab) of chocolate ganache (reserved from the truffle ganache — if you have extra, cool to piping consistency) onto the center of a shell and sandwich with its pair. Refrigerate for at least 24 hours for best texture, then bring to room temperature before serving.

Fill

Arrange the truffles and macarons on a serving platter with small piles of assorted nuts and dried fruit. Scatter dark chocolate bark shards among them. Lightly dust a few truffles with sea salt flakes if desired.

Serve with the Roth Estate Cabernet Sauvignon (375ml). Chill the bottle briefly (about 20–30 minutes) if preferred slightly cool, or serve at cellar/room temperature (about 60–65°F / 16–18°C) depending on preference. Pour small tasting portions alongside the sweets for pairing.

Storage note: keep truffles refrigerated in an airtight container up to 7 days. Macarons keep refrigerated up to 3 days (best after 24 hours maturation). Nuts and dried fruit keep at room temperature in a sealed container for several weeks.
