Prepare Spam
Remove the can lid completely and carefully slide the block of Spam out onto a cutting board. Pat the Spam dry with paper towels to remove excess oil. If desired, trim any rounded edges for even slices.
Cut the Spam into slices about 1/4 to 1/2 inch (6–12 mm) thick, depending on preference. For cubes (for fried rice or musubi), cut into 3/4-inch (2 cm) cubes. For musubi, cut slices to fit nori and rice portions.

Make the Glaze
In a small bowl, whisk together soy sauce, brown sugar, water, rice vinegar, sesame oil, and crushed red pepper until sugar dissolves. Taste and adjust sweetness or salt as desired. This glaze will caramelize quickly during cooking.
If you prefer plain fried Spam, skip the glaze and proceed to frying. The glaze is optional but adds a sweet-salty finish commonly used in musubi or glazed Spam dishes.
Cooking & Serving
Pan-Fry Spam
Heat a large skillet or nonstick pan over medium-high heat. Add vegetable oil and let it heat until shimmering. Add Spam slices in a single layer without overcrowding; cook in batches if necessary. Fry until the bottom is golden brown and crisp, about 2–3 minutes. Flip and fry the other side 1–2 minutes until browned and heated through.
Glazed Spam (optional)
If using glaze, reduce heat to medium after initial browning. Push Spam to one side of the pan, add the glaze to the empty area and let it bubble for 10–20 seconds to thicken slightly, then toss/spoon glaze over each slice to coat. Cook 30–60 seconds more until glaze is sticky and caramelized. Remove from pan to a plate.
Serve
Serve the Spam hot. Suggested servings: place slices over steamed rice with a sprinkle of sliced green onions for a simple Spam bowl, make Spam musubi by placing a slice on compacted rice and wrapping with a nori strip, or serve between bread/lettuce for a sandwich. Optionally fry or scramble eggs to accompany the Spam. Finish with black pepper to taste.
Leftovers: Store cooled Spam slices in an airtight container in the refrigerator for up to 3–4 days. Reheat in a skillet over medium heat for best texture; avoid microwaving for long periods to prevent rubbery texture.
