Trim and season
Pat the beef chuck roast dry with paper towels. Trim any excessive large exterior fat but leave some for flavor. Rub the olive oil all over the roast. In a small bowl combine kosher salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub the spice mixture evenly over the entire roast. Drizzle Worcestershire sauce over the roast and rub it in.
Marinate
Place the seasoned roast into a shallow dish or a resealable bag and refrigerate for at least 2 hours or up to overnight to let flavors develop. If short on time, rest at room temperature for 30 minutes before cooking.
Bring to temperature and preheat
Remove roast from refrigerator 30–60 minutes before cooking to come closer to room temperature. Preheat the oven to 325°F (160°C). If using a grill or smoker, prepare for indirect cooking at about 275–300°F (135–150°C).
Cooking & Basting with BBQ Sauce
Sear (optional, for better crust)
Heat a heavy Dutch oven or large oven-safe skillet over medium-high heat. Add a small amount of oil if needed. When hot, sear the roast 2–3 minutes per side until a deep brown crust forms. This step is optional but adds flavor.
Slow roast
If using a Dutch oven: place the seared roast into the pot (lid on). If using a roasting pan: place roast on a rack in the pan and tent loosely with foil. Roast in the preheated oven at 325°F (160°C) for about 2 to 2.5 hours, or until internal temperature reaches 195–205°F (90–96°C) for pull-apart tenderness. If using a smoker or grill, cook indirectly at 275–300°F until the same internal temperature is reached. Cooking time will vary by thickness; plan about 60–75 minutes per pound for lower oven temps or smokers.
Make the BBQ sauce
While the roast cooks, combine ketchup, brown sugar, apple cider vinegar, molasses, Dijon mustard, hot sauce (if using), liquid smoke (if using), water, salt, and black pepper in a small saucepan. Bring to a gentle simmer over medium heat, stirring frequently. Reduce heat to low and simmer 6–8 minutes until slightly thickened. Taste and adjust seasoning.
Baste and finish
During the last 20–30 minutes of cooking, brush the roast generously with the prepared BBQ sauce every 8–10 minutes to build a sticky glaze. If the roast develops a dark crust too quickly, loosely tent with foil to prevent burning while continuing to baste. Continue until the roast reaches 195–205°F and the glaze is tacky.
Resting & Serving
Rest
Remove the roast from the oven or smoker and transfer to a cutting board. Tent loosely with foil and let rest for 20–30 minutes; this allows juices to redistribute and makes the beef easier to shred.
Shred or slice and finish
Using two forks, shred the beef into bite-sized pieces. If you prefer sliced beef, slice thinly against the grain. Stir in 1 tablespoon of butter and a few spoonfuls of reserved warm BBQ sauce into the shredded meat for extra gloss and flavor. Taste and adjust salt or sauce.
