    Prepare glass

    Fill a large Collins glass or tiki mug with crushed ice and set aside to chill while you build the drink.

    Measure and combine

    In a shaker filled with ice, add 1 oz Bacardi light rum, 1 oz dark rum, 1/2 oz overproof rum, 1 oz passion fruit juice or purée, 2 oz pineapple juice, 3/4 oz fresh lime juice, and 1/2 tablespoon simple syrup. If you like complexity, add 2 dashes of Angostura bitters.

    Shake

    Cap the shaker and shake vigorously for about 10–15 seconds until the outside of the shaker feels cold and slightly frosty.

    Strain and assemble

    Discard any excess meltwater from the chilled glass. Strain the shaken mixture into the chilled glass over the crushed ice. Pack the ice to create a mound above the rim.

    Float overproof rum

    Carefully pour 1/4 oz overproof rum over the back of a spoon held just above the ice mound to create a light float on top of the drink.

    Garnish

    Garnish with a mint sprig, a lime wheel or wedge, and a pineapple wedge if using.

    Serve

    Serve immediately with a straw. Advise the guest that the drink contains multiple rums and is high in alcohol.

Flaming top (optional — use caution)

    If you want a dramatic flaming presentation, pour an additional 1/4 oz overproof rum into a small metal spoon and carefully pour it over the float or directly on top in a thin stream. Light the top with a long match or lighter. Keep flames small and never leave unattended. Extinguish the flame before drinking by covering with a metal shaker tin or blowing gently. Warn guests to wait until the flame is fully out and the drink has cooled slightly before consuming.
