Method

Prepare glass

    Choose a tall Collins or tiki-style glass (12–16 oz). Fill the glass about three-quarters full with cubed ice to chill while you mix the cocktail.

Mixing

    Combine spirits and juices

    In a cocktail shaker filled halfway with ice, add 1.5 oz light rum, 0.25 oz overproof rum, 0.5 oz dark rum, 0.5 oz Jim Beam, and 0.5 oz triple sec.

    Add juices and sweetener

    Add 1 oz passion fruit juice, 1 oz cranberry juice, 1 oz orange juice, 2 oz pineapple juice, 0.5 tbs simple syrup and 0.5 oz fresh lime juice to the shaker.

    Shake

    Secure the shaker and shake vigorously for 10–12 seconds until the exterior of the shaker is cold and slightly frosted.

Assemble

    Discard the ice used to chill the glass (if preferred) and fill the glass with fresh ice. Double-strain the shaken mixture into the prepared glass over fresh ice to remove any pulp or large ice shards.

    Float a thin layer of dark or overproof rum (optional) by gently pouring 0.25–0.5 oz over the back of a spoon so it rests on the surface for aroma and visual effect.

Garnish & finish

    Garnish with a pineapple wedge, lime wheel and a maraschino cherry on a pick. If desired, grate a small pinch (about 0.1 tsp) of fresh nutmeg over the top for an aromatic finish.

    Serve with a straw and a stirrer. Advise guests to stir gently before drinking to integrate the floated rum.
