1. Make the Hula Sauce

In a small bowl, whisk together mayonnaise, ketchup, soy sauce, pineapple juice, Sriracha, lime juice, garlic powder, and ground ginger until smooth. Taste and adjust heat or acidity as desired. Refrigerate while you prepare the burger (can be made up to 2 days ahead).

2. Slice and Cook Onions

Cut the half onion into 1/4-inch thick rings. Heat a skillet or cast-iron pan over medium-high heat and add butter and olive oil. When the butter is foaming, add the onion rings in a single layer (work in two quick batches if necessary). Sprinkle brown sugar, salt, and pepper over the onions. Let cook without stirring for 2-3 minutes to develop color, then flip and cook another 2-3 minutes until caramelized and softened (total 6-8 minutes). Reduce heat if they are browning too fast. Transfer to a plate and keep warm.

3. Form and Season Patty

Gently form the 8oz equivalent portion of ground beef into a 3/4-inch thick patty (this recipe lists 0.5 lb = 8 oz). Make a shallow dimple in the center with your thumb to reduce bulging. Season both sides evenly with kosher salt and black pepper just before cooking.

4. Cook the Patty

Heat a grill or heavy skillet over medium-high heat and brush with the vegetable oil. Place the patty on the hot surface. Cook undisturbed for 3-4 minutes to develop a good sear. Flip and cook another 3 minutes for medium (adjust time for desired doneness). In the final 1 minute of cooking, lay the American cheese slice over the patty and cover loosely to melt.

5. Toast the Bun

Split the bun and toast cut sides on the grill or skillet until lightly golden, about 30-60 seconds. Remove and set aside.

6. Assemble the Hula Burger

Spread about 1 tablespoon of Hula Sauce on the bottom bun. Place the melted-cheese-topped patty on the sauce. Heap the warm grilled Maui onions over the patty (about 2-3 tablespoons). Add shredded lettuce and a tomato slice if using. Spoon an extra 1 teaspoon of Hula Sauce on the top bun and close the burger.

7. Serve

Serve immediately with fries or a side salad. Enjoy.
