Method
Punch Base
- 1
Chill bowl
Place a large glass or ceramic punch bowl (about 3–4 L) in the refrigerator for 15–20 minutes or fill it with ice water to chill while preparing ingredients.
- 2
In a large measuring pitcher or another bowl, combine 8 fl oz light rum, 4 fl oz dark rum, and 2 fl oz brandy.
- 3
Add 12 fl oz pineapple juice, 6 fl oz cranberry juice, and 2 fl oz fresh lemon juice to the spirits. Stir gently to combine.
- 4
Add 1 fl oz simple syrup to taste and stir again. Taste the mixture and adjust sweetness or acidity: add up to 0.5 fl oz more simple syrup for sweeter, or 0.5 fl oz more lemon juice for brighter acidity.
- 5
- 6
Stir the bowl gently for 20–30 seconds to integrate the ice and chill the liquid evenly.
Garnish & Finish
- 7
Nestle 1 cup pineapple chunks, 4 orange slices, 8 maraschino cherries, and 4 lemon slices into the punch so they float attractively around the bowl.
- 8
Measure 2 fl oz overproof rum into a small ladle or heatproof spoon. For a dramatic presentation, pour the overproof rum carefully over the back of a spoon so it forms a thin layer on top of the punch in one spot (a shallow pool about 3–4 inches across).
- 9
To light the float (optional — only perform if you are experienced, in a safe setting, and local laws permit open flame): dim lights, use a long lighter or long match to ignite the overproof rum pool, and let it burn for 10–20 seconds for effect. Extinguish by gently covering with a metal lid or by pouring a small amount of room-temperature punch from a ladle over the flame. Do not blow on the flame. Keep a fire extinguisher or wet towel nearby and keep guests at a safe distance while flaming.
- 10
After extinguishing the flame, give the punch a gentle stir once to incorporate any small amount of overproof rum that mixed in. Serve immediately into chilled glasses or tiki cups, making sure each serving gets fruit garnish.
- 11
Provide a ladle and serve the Scorpion Bowl to 2–4 guests, approximately 10–12 fl oz per serving depending on glassware and whether guests want extra fruit.
