Weekend Citrus Spritz

    Chill and prepare

    Chill the Prosecco (or sparkling wine) and glasses in the refrigerator for at least 20 minutes before serving. Prepare orange wheels for garnish by slicing one orange into 4 thin rounds.

    Assemble in a pitcher

    In a large pitcher, combine 1.5 cups chilled Prosecco, 1/2 cup fresh orange juice, and 1/4 cup Aperol. Stir gently with a long spoon to integrate — do not vigorously stir to preserve carbonation.

    Add ice and top with soda: Add ice cubes to the pitcher or to individual poured glasses (about a few cubes per glass). Pour the mixture into four glasses, filling each about three-quarters full, then top each with a splash of club soda (about 2 tablespoons / 0.5 cup total divided among glasses) to add brightness and a little effervescence.

    Garnish and serve: Float an orange wheel on each drink. Serve immediately, with a spoon or straw on the side if desired. Recommend serving between 10:30am - 3:30pm as the special window.

Citrus-Mint Mocktail (nonalcoholic)

    Muddle mint

    In a large pitcher, add the fresh mint leaves and simple syrup. Gently muddle the mint a few times with the spoon to release aroma — do not pulverize.

    Add juices and bitters: Pour in 1/2 cup fresh orange juice and 1/4 cup nonalcoholic bitter aperitif or tonic cordial. Stir to combine.

    Finish with sparkling water and ice: Add 1.5 cups chilled sparkling water, then add ice to the pitcher or to individual glasses. Stir gently and taste; add an extra 1/2 tbs simple syrup if you prefer sweeter.

    Garnish and serve: Pour into four glasses, top each with an orange wheel, and place a mint sprig (from the muddled leaves) on top. Serve chilled during the happy hour window.

Clean up & notes

    Leftovers: If you have leftover mixed spritz base (Prosecco + Aperol + orange), store in the refrigerator and top with fresh soda when serving later the same day. For the mocktail base, keep chilled and consume within 24 hours for best flavor.

    Batching: Quantities given serve 4. To serve larger crowds, scale ingredients proportionally. When batching alcoholic spritzes, keep sparkling components separate until just before serving to preserve carbonation.
