    Prepare glass

    Chill a Champagne flute or coupe by placing it in the freezer for a few minutes or filling it with ice water while you prepare the cocktail.

    Combine base ingredients

    In a cocktail shaker, add 1.5 oz Whale gin, 0.75 oz passionfruit puree (or pulp from one fresh passionfruit), 0.5 oz fresh lemon juice, 0.5 oz simple syrup, and 2 dashes tiki bitters.

    Shake with ice

    Add a handful of ice (about 1 cup) to the shaker. Secure the lid and shake vigorously for 10–15 seconds until the shaker is cold and the mixture is well chilled and slightly frothy from the passionfruit.

    Strain

    Discard the ice or water from your chilled flute/coupe. Double-strain the shaken mixture into the chilled flute/coupe using a Hawthorne strainer and a fine-mesh strainer to remove ice shards and passionfruit seeds for a smooth finish.

    Top with sparkling wine

    Gently top the cocktail with about 3 oz chilled sparkling wine. Pour slowly down the side of the glass to preserve effervescence and avoid overflow.

    Finish and garnish

    Give the drink a very gentle stir (one short turn) to integrate the sparkling wine with the shaken base. Garnish with half a passionfruit floated on top or a lemon twist perched on the rim.

    Serve

    Serve immediately while sparkling wine is bubbly. Recommend enjoying within a few minutes to appreciate the effervescence and the balance of gin, passionfruit, and citrus.
