    Prepare & Marinate

    If using fresh raw linguiça, leave whole. If pre-cooked, you can slice after heating. In a bowl combine 2 tbs olive oil, minced garlic, smoked paprika, red wine vinegar and black pepper. Toss whole sausages in the marinade to coat. Let them sit at room temperature for 15–20 minutes (or refrigerate up to 2 hours) to absorb flavors.

    Pan-Sear or Grill

    Heat a large skillet over medium-high heat (or preheat grill to medium). Add the marinated sausages (no extra oil if using a nonstick or grill, otherwise add 1 tbs oil to pan). Cook whole sausages, turning every 3–4 minutes, until nicely browned on all sides and internal temperature reaches 160°F (71°C) for fresh pork or 140°F (60°C) if the package indicates pre-cooked — about 12–16 minutes total for fresh sausages or 8–10 minutes for pre-cooked. If sausages are thick, reduce heat to medium after browning and continue to cook through. Rest sausages 5 minutes before slicing.

    Slice (if desired)

    If you prefer, slice sausages on the bias into 1/2-inch pieces after resting. Return slices briefly to the skillet for 1–2 minutes if you want extra crisp edges.

Vegetable Sauté (optional serving)

    While sausages marinate or during cooking, heat 1 tbs olive oil in a separate large skillet over medium heat. Add sliced onion and cook 3–4 minutes until beginning to soften. Add red and green bell peppers and cook 5–7 minutes, stirring occasionally, until vegetables are tender and lightly caramelized. Stir in chopped tomato (if using) and cook 2 more minutes until warmed. Season with 1/2 tsp salt and 1/4 tsp black pepper. Keep warm until sausages are done.

    To combine: If you sliced the linguica, add the slices to the vegetable pan for 1–2 minutes and toss to coat with pan juices for a composed skillet to serve family-style.

To Finish & Serve

    Transfer whole or sliced linguiça to a serving platter over the sautéed vegetables or alongside. Sprinkle with chopped parsley and serve with lemon wedges to squeeze over the sausages for brightness.

    Serve with crusty bread to mop up juices or with rice for a heartier plate. Provide extra mustard or hot sauce at the table if desired.
