Simple Syrup

Make simple syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Stir to combine, then bring to a gentle simmer over medium heat. Continue stirring until sugar is fully dissolved and liquid is clear, about 3–5 minutes. Do not boil vigorously. Remove from heat and let cool to room temperature. You can chill the syrup in the refrigerator to speed cooling.

Juice the lemons
Roll the lemons on the counter with your palm to loosen juice. Cut lemons in half and juice until you have approximately 1 cup (240 ml) of fresh lemon juice. Strain through a fine mesh sieve into a measuring cup to remove seeds and excessive pulp if desired.

Combine ingredients
In a large pitcher, pour the strained lemon juice. Add 1 cup chilled simple syrup, 4 cups cold water, and a 1/4 teaspoon pinch of salt if using. Stir thoroughly and taste. Adjust sweetness or intensity by adding more water (to dilute) or more simple syrup (to sweeten).

Chill and serve
Add ice cubes to the pitcher or to individual glasses. Pour lemonade over ice, garnish with lemon slices and mint sprigs if desired. Serve immediately. Store any leftover lemonade in the refrigerator for up to 3 days; stir before serving as separation may occur.
