Breakfast Potatoes

    Par-cook potatoes

    Place diced potatoes in a pot, cover with cold water, add a pinch of salt and bring to a simmer. Cook until just fork-tender, about 6–8 minutes. Drain thoroughly and let steam-dry in the colander for 2–3 minutes.

    Crisp potatoes

    Heat a large nonstick or cast-iron skillet over medium-high heat. Add olive oil and butter. When fat is shimmering, add the par-cooked potatoes in a single layer. Let them sit undisturbed 2–3 minutes to form a crust, then stir/turn occasionally until golden, about 8–10 minutes total.

    Add diced onion and minced garlic when potatoes are about halfway done. Season with smoked paprika, salt and pepper. Continue to cook until onions are soft and potatoes are crisp on the outside and tender inside, another 3–4 minutes. Stir in chopped parsley off the heat and keep warm.

Weekly Chef Filling (example)

    Prepare the weekly filling as the server specifies; here is the example prep: If using ham, mushrooms and red pepper, heat a small sauté pan over medium heat with 1 tsp butter or oil and warm the diced ham until lightly browned (1–2 minutes). Add sliced mushrooms and cook until they release moisture and brown, about 3–4 minutes. Add roasted red pepper at the end to warm through. Keep filling warm and pat dry of excess moisture so it won't make the omelette soggy.

    Grate or shred the cheese and chop chives. Portion filling so each omelette gets about the listed amounts.

    Beat eggs

    Crack 3 eggs into a bowl. Add 2 tablespoons milk, a pinch of salt and a pinch of pepper. Whisk vigorously until homogenous and slightly frothy (about 20–30 seconds) to incorporate air for a fluffy omelette.

    Preheat pan

    Heat a 10-inch nonstick skillet over medium-low to medium heat. Add 1 tablespoon butter and swirl to coat. Butter should foam but not brown.

    Cook eggs

    Pour the beaten eggs into the pan. Let them sit undisturbed for about 10–15 seconds until the edges begin to set. Using a silicone spatula, gently pull the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Repeat around the pan until the surface is mostly set but still slightly glossy (soft curds), about 1–2 minutes total.

    Add filling

    Spread the warm filling (ham, mushrooms, peppers) across one half of the omelette in an even layer. Sprinkle the shredded Gruyère and chopped chives over the filling.

    Fold and finish

    Carefully fold the empty half of the omelette over the filling using the spatula. Let the folded omelette rest in the pan for 20–30 seconds to finish cooking and melt the cheese. If desired, flip the entire omelette for 10–15 seconds for additional browning, then slide onto a plate.

    Season lightly with additional salt and pepper to taste and garnish with microgreens or extra chives if using.

Plating

    Place the omelette on a warm plate and serve the breakfast potatoes alongside (about 2 cups). Add a small ramekin of hot sauce or ketchup if desired.
