Method

Tea Base

    Make concentrated spiced black tea

    Bring 500 ml water to a near boil in a small saucepan. Add sliced ginger (20 g) and sliced or grated turmeric (15 g). Reduce heat and simmer gently for 6 minutes to extract aroma and warmth.

    Turn off the heat and add 2 black tea bags to the hot spiced water. Cover and steep for 5 minutes for a strong base. Taste after 4–5 minutes and remove tea bags to avoid bitterness.

    Strain the tea through a fine mesh sieve into a heatproof container, pressing solids to get the most flavor. Discard solids. Allow the tea to cool to warm (about 10 minutes) before adding honey so it dissolves easily.

Sweetener & Citrus

    Stir 3 tbs honey into the warm spiced tea until fully dissolved. Add 30 ml fresh lemon juice and taste. Adjust honey or lemon if you prefer sweeter or tarter.

Fruit & Spirit (mocktail)

    In a mixing jug or shaker, combine 45 ml El Cantinero passion fruit syrup and 60 ml fresh pineapple juice. Add 120 ml of the cooled spiced black tea mixture (strained and sweetened). Stir or gently shake to combine.

    If you prefer a lighter or fizzy drink, substitute part or all of the 120 ml tea with soda water or add additional cold water to taste.

Finish & Garnish

    Fill a serving glass with 1 cup crushed ice. Pour the combined mocktail mixture over the ice. Stir gently to chill and integrate flavors.

    Optional: Grind a very small pinch of black pepper over the top (about 1/8 tsp) to accentuate the turmeric's warmth — use sparingly.

    Garnish with a wedge of pineapple or a spoonful of passion fruit seeds and a sprig of fresh mint. Serve immediately.
