Prepare the Marinade

In a small bowl, combine minced garlic, chopped rosemary, thyme, olive oil, salt, and black pepper to create a marinade.

Marinate the Lamb

Rub the marinade all over the rack of lamb, making sure to coat it evenly. Cover the lamb and let it marinate in the refrigerator for at least 1 hour, or overnight for best results.

Preheat the Oven

Preheat your oven to 400°F (200°C).

Sear the Lamb

In an oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Sear the rack of lamb for about 2-3 minutes on each side until browned.

Roast the Lamb

Transfer the skillet to the preheated oven and roast the lamb for about 20-25 minutes for medium-rare, or until it reaches your desired doneness.

Make the Sauce

Remove the lamb from the oven and let it rest for 10 minutes. In the same skillet, add red wine and bring to a simmer. Scrape the bottom of the skillet to deglaze. Stir in butter until melted and smooth.

Serve

Slice the rack of lamb into chops and serve with the red wine sauce drizzled over the top.
