Prepare the Steak

Take the aged ribeye steaks out of the refrigerator and let them come to room temperature for about 30-60 minutes before cooking. Pat them dry with paper towels.

Season the Steak

Generously season both sides of the steaks with kosher salt and freshly ground black pepper. Drizzle olive oil over each steak and rub it in evenly.

Preheat the Grill

Preheat your grill to high heat (about 450-500°F / 230-260°C). Make sure the grill grates are clean.

Char-broil the Steak

Place the steaks on the grill and cook for 4-5 minutes on one side without moving them. Flip the steaks and cook for an additional 4-5 minutes for medium-rare. Adjust the cooking time as needed for your desired doneness.

Rest the Steak

Remove the steaks from the grill and let them rest for about 5-10 minutes before slicing. This allows the juices to redistribute.
