Preparation
Prepare the Plantains
Peel the plantains and cut them into halves. Boil them in salted water for about 10-15 minutes until soft. Drain and let cool.
Mash the Plantains
Once the plantains are cool, mash them in a bowl until smooth. You can add a pinch of salt for flavor.
Make the Filling
In a separate bowl, combine the refried beans and queso fresco until well mixed.
Form the Molotes
Take a small amount of the mashed plantain and flatten it in your palm. Place a spoonful of the bean and cheese mixture in the center and fold the plantain over to create a turnover. Seal the edges by pressing them together.
Fry the Molotes
Heat oil in a frying pan over medium heat. Fry the molotes in batches until golden brown and crispy, about 3-5 minutes per side.
Serve
Remove the fried molotes and place them on paper towels to absorb excess oil. Serve warm with your choice of salsa or avocado.
