Prepare the Pork

Preheat the oven to 150°C (300°F). Rub the pork shank with salt, pepper, minced garlic, and chopped onion. Place it in a roasting pan.

Roast the Pork

Cover the pork shank with aluminum foil and roast in the preheated oven for about 4 hours, or until the meat is tender and falling off the bone.

Make the Huaxmole Verde Sauce

In a blender, combine cilantro and huaxmole verde sauce. Blend until smooth and set aside.

Prepare the Tamal

Steam the black bean tamals according to package instructions or recipe until heated through.

Serve

Once the pork is cooked, remove it from the oven and let it rest for 10 minutes. Serve the pork shank with huaxmole verde, purslane, and black bean tamal on the side.
