Preparation

    Cook Soba Noodles

    Bring a pot of water to a boil and cook the soba noodles according to the package instructions. Drain and rinse under cold water. Set aside.

    Prepare Pickled Vegetables

    Julienne the carrot and daikon radish. Combine them in a bowl with a pinch of salt and let them sit for about 10 minutes to soften.

    Prepare Dressing

    In a small bowl, whisk together soy sauce, sesame oil, and a splash of rice vinegar or lime juice to create the dressing.

    Combine Ingredients

    In a large bowl, combine the cooked soba noodles, pickled carrots and daikon, edamame, chopped scallions, mint, and cilantro. Pour the dressing over the salad and toss to combine.

    Add Optional Ingredients

    If using, slice the avocado and add it on top. If adding protein (chicken, shrimp, or steak), cook the protein as desired and place it on the salad.

    Serve

    Serve chilled or at room temperature, garnished with additional herbs if desired.
