Prepare the Wings
Preheat your oven to 400°F (200°C). In a large bowl, toss the chicken wings with olive oil and adobo seasoning until evenly coated. If you prefer hot sauce, you can add it at this stage to taste.

Bake the Wings
Spread the seasoned wings in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 40-45 minutes, turning halfway through, until the wings are crispy and cooked through.

Prepare the Dipping Sauce
While the wings are baking, prepare the blue cheese dipping sauce by placing it in a serving bowl. Cut celery sticks into bite-sized pieces for serving.

Serve
Once the wings are done, remove from the oven and let them rest for a few minutes. Serve warm with the blue cheese dipping sauce and celery sticks on the side.
